Lobster Poutine Sandwich
Ingredients
  • 1/2 cup butter
  • 2 cups cooked lobster meat
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon cornstarch
  • 2 cups light cream, divided
  • 8 slices bread
  • 2 tablespoons butter, or as needed

Heat a large frying pan over medium-low heat and melt 1/2 cup of butter, stirring occasionally. Combine the lobster with the melted butter in the pan and cook until it reaches a heated state, taking around 5 minutes to achieve this. Add a pinch of salt and pepper to taste.

In another small bowl, mix together 1 tablespoon of cornstarch with a small amount of cream until you get a smooth paste. Pour the remaining cream into the bowl with the lobster and stir in the cornstarch mixture, then continue to cook and stir until the cream sauce thickens slightly and reaches a simmering point, approximately taking 5 minutes to accomplish this.

Prepare some bread by placing it in a toaster or under the broiler until it's lightly toasted. Spread about 2 tablespoons of butter onto each piece of toast, then prepare to assemble the dish.

To serve, pour a generous amount of creamed lobster over one piece of buttered toast. Place another piece of toast on top and then pour some more creamed lobster over the second layer, finishing off with a generous helping of the sauce.
