Loaded Veggie Nachos with Peppers and Corn
Ingredients
  • 1 (12 ounce) bag round tortilla chips
  • 1 1/3 tablespoons vegetable oil
  • 1/3 cup chopped green bell pepper
  • 1/3 cup chopped red bell pepper
  • 1/3 cup chopped green onions
  • 1 cup chopped tomato
  • 1/2 cup frozen corn
  • 1 pinch chili powder
  • 1 pinch onion powder
  • 1 pinch garlic salt
  • 8 ounces nacho cheese, or to taste
  • 2 jalapeno peppers, chopped
Instructions
1
Arrange tortilla chips in a spacious serving platter.
2
Heat oil in a cooking vessel over an intermediate temperature. Introduce bell peppers and cook for 1 minute. Incorporate onions and continue cooking for an additional 2 minutes. Add tomato and corn, then cook for another 2 minutes while incorporating chili powder, onion powder, and garlic salt to enhance flavor. Take the skillet off the heat source.
3
Transfer nacho cheese into a microwave-safe container and warm it in the microwave for 2 minutes. Pour the melted cheese carefully over the tortilla chips. Spoon the cooked vegetables on top of the cheese. Sprinkle jalapenos over the finished dish
