Loaded Chicken Nachos
Ingredients
  • 2 skinless, boneless chicken breast halves - chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon cayenne pepper, or to taste
  • 1 (12 ounce) package corn tortilla chips, or as needed
  • 1 (8 ounce) package shredded Mexican-style cheese blend
  • 1 (7 ounce) can diced green chilies, drained
Instructions
1
Combine the chicken, vegetable oil, and a pinch of heat in a medium-sized bowl. Allow the mixture to marinate for 15 minutes, or extend the time if you prefer a stronger flavor.
2
Heat a large skillet over high heat. Introduce the chicken mixture into the skillet and cook until the chicken is fully cooked, no longer pink. Set the skillet aside.
3
Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius). Cover a 9x13 inch baking dish with a thin layer of crushed tortilla chips. Distribute one-quarter of the chicken, one-quarter of the chilies, and one-quarter of the cheese evenly over the chips. Repeat this layering process until you reach the top, finishing with a layer of cheese.
4
Place the baking dish in the preheated oven and bake for 15 to 20 minutes, or until the cheese is melted and everything is heated through.
