  • 5 pounds potatoes, peeled and cubed

  • 6 eggs
  • 1 cup all-purpose flour
  • 2 tablespoons olive oil
  • ground black pepper to taste

Apply a thin layer of olive oil to a 12x15 inch baking dish, ensuring it is evenly coated.

Place salt pork in a large, deep pan over medium heat and cook until it is uniformly browned, stirring occasionally.
