  • 1 pound honey
  • 3 1/2 cups bottled water
  • 3 cups white sugar
  • 3 tablespoons caraway seeds
  • 25 whole cloves
  • 1 tablespoon vanilla extract
  • 4 teaspoons ground cinnamon
  • 2 teaspoons ground nutmeg
  • 2 pints 190 proof grain alcohol

Remove the outer layers of the orange and lemon in a continuous, sweeping motion to create long strips. Allow these dried peels to air dry for 24 hours in a warm, dry space.

Combine the honey, 1 cup of water, sugar, caraway seeds, ground cloves, vanilla extract, cinnamon, and ground nutmeg in a large cooking vessel; heat it until the mixture reaches a rolling boil. Lower the heat to a low setting and let it simmer for 45 minutes. Introduce the dried orange and lemon peels into this mixture, then continue to simmer for an additional 15 minutes.

Turn off the heat and discard the fruit peels. Mix the grain alcohol with the remaining 2 1/2 cups of water and then add it to the honey mixture. Transfer this combined liquid into a glass container, ensuring it is tightly sealed with a lid. Place the container in a cool location, away from direct sunlight, and allow it to settle for 1 week. Periodically gently rotate the container every few days.

Strain the mixture through a layer of cheesecloth to remove any sediment that has formed. Pour the resulting liqueur into bottles or decanters and seal them tightly.
