Ingredients
- 1 pound linguine, uncooked
- 1/3 pound sliced bacon, cut in half
- 1/3 cup extra virgin olive oil
- 2 cloves garlic, thinly sliced
- 1/2 pound fresh asparagus, trimmed and cut into 1/2 inch pieces
- 1 (5 ounce) package baby arugula leaves
- 1/4 cup fresh lemon juice
Instructions
1
Begin by filling a large container with salted water and placing it on high heat, bringing the mixture to a rolling boil. Next, carefully add your pasta of choice into the boiling water and continue cooking until it reaches a tender yet still firm texture, typically taking around 8 to 10 minutes. Remove the pasta from the water with a slotted spoon and set it aside on a clean surface.
2
In a separate large pan, cook the bacon over medium heat until it reaches a golden brown color and becomes crispy. Remove the cooked bacon from the pan with a slotted spoon and place it on paper towels to drain excess grease. Pour some olive oil into the same pan, then add minced garlic and fresh asparagus to the mixture. Cook for about 1 minute while stirring occasionally, allowing the flavors to meld together and the asparagus to slightly soften.
3
Add your cooked pasta back into the pan, then immediately turn off the heat source. Combine the pasta with some fresh arugula leaves, a squeeze of lemon juice, and the crispy bacon you cooked earlier. Mix everything together to create a delicious and satisfying dish.
