Linguica Sausage Soup
Ingredients
  • 2 tablespoons olive oil
  • 3 medium Yukon Gold potatoes, diced
  • 1 large sweet onion, chopped
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 3 cloves garlic, chopped
  • salt and ground black pepper to taste
  • 1/4 teaspoon red pepper flakes, or more to taste
  • 1 bunch kale, stems removed and leaves chopped
  • 2 bay leaves
  • 5 cups chicken broth
  • 1/2 pound linguica sausage, diced
  • 1/2 pound chorizo sausage, diced
  • 1 (14 ounce) can diced tomatoes
  • 1 (14 ounce) can garbanzo beans, with liquid
Instructions
1
Initiate the cooking process by heating oil in a large, deep pot over an intermediate heat setting until it begins to vigorously bubble and emit a sizzling sound, approximately 1 minute.
2
Next, add the root vegetables - potatoes, onion, carrots, and celery - to the pot. Continue to cook and stir these vegetables for a duration of 3 to 4 minutes, allowing them to soften slightly.
3
Subsequently, introduce the aromatic ingredient garlic into the pot, along with salt, pepper, and a pinch of red pepper flakes. Stir these ingredients together for an additional 2 to 3 minutes, allowing their flavors to meld.
4
Now, incorporate the leafy green vegetable kale and the fragrant bay leaves into the pot. Cover the pot with a lid, allowing the kale to wilt and tenderize for 2 to 3 minutes.
5
Following this, add a rich, savory liquid - chicken broth - along with the cured meats linguica and chorizo to the pot. Introduce diced tomatoes and garbanzo beans, including their juices, into the mixture as well. Bring this combination to a rolling boil, approximately 5 minutes later.
6
Finally, reduce the heat setting to an intermediate level and continue to simmer the mixture until the root vegetables have reached a tender state, approximately 15 minutes additional.
