Lime Shredded Beef Tacos

  • 2 tablespoons vinegar
  • 2 tablespoons lime juice
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons chili powder
  • 3 cloves garlic, minced
  • 1 1/2 pounds beef chuck roast, trimmed and cut into 1-inch thick slices
  • 1 cup beef stock
  • salt to taste

Combine the oil, vinegar, lime juice, cumin, chili powder, and minced garlic in a bowl and mix until well combined. Transfer the mixture to an airtight container and add the sliced beef, ensuring it is fully coated with the marinade. Remove any excess air from the container and seal it tightly.

Place the marinated beef in the refrigerator for at least 4 hours or overnight.

Take the beef out of the refrigerator and let it sit at room temperature for approximately 20 minutes to allow it to soften.

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

Transfer the beef and marinade mixture to a large baking dish, adding the beef stock as well. Cover the dish with aluminum foil to prevent drying out.

Bake the beef in the preheated oven for 2 1/2 hours, or until it reaches a tender state.

Once the beef is cooked, remove it from the oven and let it rest for 10 minutes before shredding it using two forks.

Strain off about 80% of the liquid from the shredded beef and season it with salt before serving.
