Lime Marinated Chicken
Ingredients
  • 1/4 cup ancho chile powder
  • 1 tablespoon salt
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chipotle chile powder
  • 2/3 cup canola oil, or more as needed
  • 1 large lime, juiced
  • 8 skinless, boneless chicken breast halves

Combine ancho chile powder, salt, garlic powder, onion powder, cumin, and chipotle powder in a medium-sized bowl made of glass or ceramic. Mix the ingredients thoroughly using a whisk until they are well-blended; if necessary, add some canola oil to achieve the desired consistency. If the mixture appears too dense, you can thin it out with additional canola oil.

Next, place your chicken in a glass or ceramic baking dish. Pour the marinade over the chicken, making sure it's fully coated. Refrigerate for 3 hours to allow the flavors to penetrate.

Before baking, preheat your oven to a high temperature of 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil to make cleanup easier.

Arrange the chicken on the prepared baking sheet in a single layer, leaving some space between each piece. Discard any excess marinade that may have accumulated.

Place the chicken in the preheated oven and bake until it reaches an internal temperature of at least 165 degrees F (74 degrees C), which should take around 30 minutes. Use an instant-read thermometer to check the internal temperature. Once done, remove the chicken from the oven and let it rest for 5 to 6 minutes before serving.
