Lime Garlic Roasted Chicken Drumsticks
Ingredients
  • 1/4 cup olive oil
  • 1 large lime, juiced, or more to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley flakes
  • 1/2 teaspoon ground black pepper
  • 10 skinless chicken drumsticks
Instructions
1
Combine the ingredients of olive oil, lime juice, garlic powder, onion powder, chili powder, oregano, parsley, and pepper in a large, food-grade storage container with a tight-fitting lid. Add the chicken drumsticks and thoroughly coat them in the marinade mixture, ensuring that each piece of chicken is well-covered. Remove any air from the container and seal it securely.
2
Place the container in the refrigerator to allow the chicken to marinate for at least 2 hours or preferably overnight, allowing the flavors to penetrate deeply.
3
In preparation for cooking, preheat your oven to 425 degrees F (220 degrees C). To make the baking process more efficient, line a large baking sheet with aluminum foil to catch any drips or spills.
4
Once the oven has preheated, remove the chicken drumsticks from the marinade and gently shake off any excess. Arrange the chicken on the prepared baking sheet in a single layer, making sure not to overcrowd it.
5
Discard any remaining marinade and let the chicken sit at room temperature for a few minutes, allowing it to come to a comfortable temperature before cooking.
6
Place the baking sheet in the preheated oven and roast the chicken until it is nicely browned, approximately 25 minutes. Flip the chicken over halfway through cooking and baste it with its own juices, continuing to cook until both sides are browned. Use a food thermometer to check the internal temperature of the chicken; it should read 165 degrees F (74 degrees C).
7
Cover the chicken with aluminum foil and let it stand for a few minutes before serving. This allows the juices to redistribute, making the chicken more tender and flavorful.
