Lima Bean Vegan Chow Mein

  • 2 teaspoons liquid amino acids (such as Bragg®)
  • 1/2 teaspoon white sugar
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable stock
  • 2 teaspoons peanut oil
  • 1 cup canned large lima beans
  • 1/4 teaspoon salt
  • 1/2 pound sweet onions (such as Vidalia®), sliced
  • 1 rib celery, sliced diagonally
  • 1 cup cooked brown rice

Combine the vegetable stock, liquid amino acids, sugar, and a pinch of salt in a small container. Whisk the cornstarch with 1 tablespoon of vegetable stock until it becomes a smooth paste.

Heat the peanut oil in a large cooking vessel over extremely high heat; add the lima beans and a pinch of salt. Cook and stir the beans until they are partially warmed, taking around 2 to 3 minutes.

Add the onions and celery to the cooking vessel, reducing the heat to a moderate level. Cook, stirring constantly, until the vegetables are heated through and coated in oil, also taking around 2 to 3 minutes.

Pour the mixture of vegetable stock and liquid amino acids over the bean mixture, then turn the heat to an extremely high level. Cover the cooking vessel and cook over a moderate heat for 4 minutes.

Stir the cornstarch mixture into the bean mixture and cook, stirring constantly, until the sauce thickens to a desired consistency, approximately 1 minute.
