Ingredients
- 2 tablespoons unsalted butter, at room temperature
- 3 large russet potatoes, or more to taste
- kosher salt and freshly ground black pepper to taste
- 1 pinch cayenne pepper, or to taste
- 3/4 cup grated sharp white Cheddar cheese
- 3 1/2 cups whole milk
Instructions
1
Preheat your oven to the desired temperature of 400 degrees Fahrenheit (200 degrees Celsius).
2
Next, take a small amount of butter and apply it generously to the interior of a 2-quart casserole dish, ensuring it's well-coated. Set the dish aside for later use.
3
Begin by peeling the required number of potatoes and cutting them into thin, round slices at a 45-degree angle.
4
Place one-third of the potato slices in an even, uniform layer at the bottom of the prepared casserole dish. Sprinkle this layer with a substantial amount of salt and a light dusting of freshly ground black pepper. If desired, add a pinch of cayenne for an extra kick.
5
Top the potato layer with one-third of the available Cheddar cheese, spreading it evenly to cover the entire surface. Repeat this process two more times, creating a total of three layers of potatoes and cheese, except for the final layer which will consist only of Cheddar cheese.
6
Carefully pour a small amount of milk into the dish, taking care not to disturb the layers. The milk should almost completely cover the potatoes, but leave a small gap at the top.
7
Top the final layer of cheese with an additional amount, and position the casserole dish on a sheet pan to catch any excess cheese that may drip during baking.
8
Bake the casserole in the center of your preheated oven until the potatoes are tender and the top is golden brown, bubbly, and well-cooked. This should take approximately 1 hour and 15 minutes.
9
Once the casserole is done, remove it from the oven and let it rest for 10 minutes before serving.
