Lightened-Up Ham and Cheese Quiche
Ingredients
  • 1 prepared 9-inch single pie crust
  • 1 tablespoon olive oil
  • 4 green onions, chopped
  • 1/2 pound cooked ham, cubed
  • 1 cup fat-free egg substitute
  • 7 fluid ounces fat-free evaporated milk
  • 1/4 cup shredded part-skim mozzarella cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon chopped fresh chives
Instructions
1
Preheat the oven to its optimal temperature of three hundred twenty-five degrees Fahrenheit. Next, take the pie crust out of its packaging and press it into an eight-inch round baking dish; set it aside for the time being.
2
Heat a generous amount of olive oil in a skillet over medium heat; cook and stir the green onions in the hot oil until they have wilted and begun to develop a rich, golden brown color, approximately two to three minutes. Remove the skillet from the heat source.
3
Spread a layer of diced ham evenly across the bottom of the pie crust, followed by a generous helping of wilted green onions.
4
In a separate bowl, combine the egg substitute, evaporated milk, and shredded mozzarella cheese. Pour this mixture over the ham and green onion layer in the pie crust. Sprinkle a pinch of Parmesan cheese and some chopped chives on top for added flavor.
5
Place the quiche in the preheated oven and bake for twenty minutes. Next, increase the heat to three hundred fifty degrees Fahrenheit and continue baking until the quiche has developed a nicely browned crust, fifteen to twenty minutes. Remove it from the oven and allow the quiche to rest for thirty minutes, or until the eggs have fully set.
