Ingredients
- 1 green bell pepper, chopped
- 1 yellow onion, chopped
- 2 tablespoons olive oil
- 2 tablespoons chicken stock
- 1 pound ground beef
- 3 tablespoons taco seasoning
- 2 large roma (plum) tomatoes, chopped
- 1/2 teaspoon salt
- 1 (8 ounce) package shredded Cheddar cheese
- 12 large romaine lettuce leaves
Instructions
1
Heat a skillet over medium heat and sauté the green bell pepper and yellow onion in olive oil, accompanied by chicken broth, until the onion becomes transparent and tender, approximately 5 minutes.
2
In a separate pan, cook ground beef over medium heat. Combine the beef with taco seasoning and stir constantly until it reaches a browned and crumbly state, taking around 5 to 8 minutes. Discard any excess oil.
3
Season the tomatoes with salt in a separate container, and place Cheddar cheese into another bowl.
4
Assemble each lettuce leaf by filling it with approximately 2 tablespoons of the beef mixture, followed by a topping of 1 to 2 teaspoons of green pepper mixture, a tomato slice, and about 1.5 tablespoons of Cheddar cheese.
