Lentil Mozzarella Salad

  • 1 1/2 cups dried lentils, rinsed
  • 4 ounces fresh mozzarella cheese, sliced
  • 4 ounces thinly sliced prosciutto
  • 1 bunch fresh basil, leaves stripped from stems
  • 1/4 cup balsamic vinaigrette dressing, or as needed

Begin by placing water in a saucepan and bringing it to the point of boiling. Next, add lentils to the water and cover the saucepan with a lid. Allow the lentils to cook gently until they become tender, which should take approximately 35 minutes. After this time has passed, remove the saucepan from the heat source and let it cool to room temperature.

Then, divide the cooked lentils evenly among four individual serving plates. Create a layered effect by placing slices of mozzarella cheese on top of the lentils, followed by thin strips of prosciutto and a sprinkle of fresh basil leaves. Finish the dish off with a drizzle of balsamic vinaigrette over each salad.
