- 1 cup red onion, diced
- 2 cloves garlic, minced
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 2 tablespoons lemon juice
- 1/2 cup diced celery
- 1/4 cup chopped parsley
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup olive oil

Combine the lentils, carrots, onion, garlic, bay leaf, and thyme in a saucepan.

Add sufficient water to the mixture so that it is at least an inch above the ingredients; heat it up until a rolling boil, then decrease the temperature and let it cook without covering for 15 to 20 minutes or until the lentils become tender but still retain some firmness.

Remove the cooked ingredients from the saucepan and discard the bay leaf.

Add a generous amount of olive oil, a squeeze of fresh lemon juice, chopped celery, parsley, salt, and pepper to the mixture.

Mix everything together gently so that all the ingredients are well combined and serve at a comfortable room temperature.
