Lentil Collard Soup
Ingredients
  • 3 tablespoons olive oil, divided
  • 1 large onion, chopped
  • 1 tablespoon salt
  • 1 cup dry red lentils, rinsed and drained
  • 6 cups water
  • 1 bunch collard greens - rinsed, stemmed and thinly sliced
  • 2 tablespoons minced garlic
  • 1 tablespoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/3 cup lemon juice

Preheat the saucepan over medium heat and warm 1 tablespoon of olive oil. Introduce the onion and salt into the saucepan, stirring until they become tender and slightly transparent, approximately 4 minutes. Add lentils to the saucepan and stir for 1 minute before pouring in water, increasing heat to high and bringing to a boil. Lower the heat to medium-low, cover the saucepan, and let it simmer until lentils are tender, roughly 15 minutes.

During this time, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Introduce collard greens into the skillet and cook until they have wilted, approximately 10 minutes.

Once lentils are tender, combine them with the cooked collard greens, garlic, cumin, and cinnamon. Let it simmer for an additional 10 minutes.

Finally, stir in lemon juice before presenting the dish.
