Ingredients
- 2 cups water
- 1 cup dry lentils, rinsed
- 1 tablespoon ground cumin
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 3/4 cup white rice, rinsed
- 2 tablespoons olive oil
- 1/4 cup vegetable oil
- 3 white onions, sliced into 1/4-inch rings

Combine 2 cups of water, lentils, cumin, garlic powder, and 1 teaspoon salt in a cooking vessel over medium heat; bring to a gentle boil. Gradually decrease the heat to low; cook until the lentils start to become tender, approximately 20-30 minutes.

Next, add rice, the remaining 3/4 cup of water, the remaining 1 teaspoon salt, and olive oil to the lentils. Cover the pot; continue cooking until both the lentils and rice are tender, requiring an additional 40 minutes.

In a separate pan, heat vegetable oil over medium heat. Add sliced onions and cook, stirring occasionally, until they are nicely browned, taking around 7-10 minutes. Finally, layer the cooked onions on top of the lentil and rice mixture; serve hot.
