- 1/2 cup frozen green peas, thawed

Heat a medium-sized saucepan over medium heat, adding a generous amount of oil to the pan. Once hot, introduce sliced onions, chopped celery, and diced carrots into the saucepan. Stir constantly for 10 minutes, or until these vegetables have reached a tender state.

Next, take the quinoa and subject it to a thorough rinsing using a strainer under cold running water. Ensure that all excess water is drained off, leaving the quinoa dry and free of impurities. Then, incorporate this cooked quinoa into the vegetable mixture, stirring it in for just 1 minute.

After that, add water to the saucepan, along with a bay leaf and some freshly squeezed lemon juice. Bring this mixture to a rolling boil before covering the saucepan with a lid, and then gradually reduce the heat to a lower medium setting. Allow this mixture to simmer for 15 to 20 minutes, or until the liquid has been fully absorbed and the quinoa is tender.
