Ingredients
- 4 skinless, boneless chicken breast halves
- 1/4 cup olive oil
- 4 large cloves garlic, pressed
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh lemon zest
- 1 tablespoon dried oregano
- 3/4 teaspoon salt
- 1/2 teaspoon coarsely ground black pepper
- 8 baby red potatoes, halved
- 1 red bell pepper, cut into 1-inch wide strips
- 1 red onion, cut into 1-inch wedges
- 1 lemon, thinly sliced

Preheat your oven to a high temperature of 400 degrees Fahrenheit, or 200 degrees Celsius for those using metric measurements. Next, position the chicken breasts in a standard-sized baking dish measuring 9x13 inches.

In a separate container, combine olive oil, minced garlic, freshly squeezed lemon juice, grated lemon zest, dried oregano, salt, and pepper. Use a whisk to thoroughly mix these ingredients together until well combined.

Using this marinade, lightly coat the chicken breasts by applying a generous amount of the mixture to each piece.

In another container, combine sliced potatoes, diced bell pepper, chopped onion, and thin slices of lemon. Pour the remaining marinade over these vegetables and gently toss to coat them evenly.

Arrange the vegetables and lemon slices around the chicken breasts in the baking dish, making sure they are evenly distributed.

Place the prepared chicken and vegetables into a preheated oven for an initial 30 minutes of cooking time.

After the initial 30 minutes, use a spoon to scrape off any excess pan drippings from the bottom of the baking dish and brush the chicken and vegetables with these drippings.

Continue to bake in the oven until the chicken develops a golden brown color, the juices run clear, and an instant-read meat thermometer inserted into the thickest part of a breast reads at least 165 degrees Fahrenheit, or 74 degrees Celsius. This should take an additional 30 minutes of cooking time.
