Ingredients
- 2 tablespoons vegetable oil
- 1 lemon grass, minced
- 1 (3 pound) whole chicken, cut into pieces
- 2/3 cup water
- 1 tablespoon fish sauce
- 1 1/2 tablespoons curry powder
- 1 tablespoon cornstarch
- 1 tablespoon chopped cilantro
Instructions
1
Preheat your cooking surface by heating a moderate amount of vegetable oil in a skillet over an intermediate heat level. Introduce lemongrass into the pan and cook until it emits a fragrant aroma, taking approximately 3 to 5 minutes. Next, add the chicken to the skillet and cook it by stirring constantly until it reaches a fully cooked state, indicated by no longer being pink in the center and having a nicely browned skin, which should take around 10 minutes.
2
Subsequently, add water, fish sauce, and curry powder to the skillet. Immediately increase the heat to a high level and bring the mixture to a rolling boil. After that, decrease the heat and let it simmer for 10 to 15 minutes.
3
To thicken the sauce, combine cornstarch with 2 tablespoons of curry sauce in a small container and mix until it reaches a smooth consistency. Then, stir the cornstarch mixture into the skillet and continue to simmer until the sauce has thickened, which should take approximately 5 minutes.
4
Finally, garnish your dish with cilantro before presenting it to your guests.
