- 1 1/2 cups unsalted butter, softened
- 1/4 cup white sugar
- 3 1/2 cups all-purpose flour
- 1 medium lemon, zested
- 1/2 cup lemon curd

Preheat your oven to 325 degrees Fahrenheit, or equivalently, 165 degrees Celsius.

Take a mixing bowl and combine the butter and sugar until they have fully incorporated, resulting in a smooth paste. Gradually incorporate the flour into this mixture, one cup at a time.

Add the lemon zest to the bowl and mix until it is fully incorporated into the dough, creating a cohesive blend.

Form the dough into small balls, approximately 1 inch in diameter, and place them on an ungreased baking sheet.

Using your thumb, create a small indentation in the center of each dough ball. This will serve as a container for the lemon curd.

Place a small spoonful of lemon curd into each indentation, filling them to the desired level.

Place the baking sheet in the preheated oven and bake until the edges of the cookies are golden brown, typically taking 15 to 20 minutes.

Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for 1 minute before transferring them to a wire rack to continue cooling completely.
