  • 1/2 cup light cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/3 cup white sugar
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 6 tablespoons cold unsalted butter

First, preheat your oven to a high temperature of 425 degrees F (220 degrees C). To prevent the strawberries from releasing excess moisture, place them on paper towels and let them dry for a while.

Next, prepare the baking sheet by lining it with parchment paper. This will make it easier to remove the finished product.

Now, combine the strawberries with some paper towels to absorb any excess moisture. In a separate container, mix together cream and vanilla extract.

In another bowl, whisk together flour, sugar, baking powder, lemon zest, salt, and nutmeg until well combined. Use a pastry blender or two knives to cut in the butter until you get a mixture that resembles coarse crumbs.

Add the strawberries to the flour mixture and gently fold them in. Create a well in the center of the dough by pushing it aside, then pour the cream mixture into the well. Mix everything together just until the dough comes together.
