Lemon Roasted Turkey Thighs with Potatoes
Ingredients
  • 1/2 cup salted butter, at room temperature
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried parsley
  • 2 teaspoons garlic powder
  • 1 teaspoon cayenne pepper
  • salt and ground black pepper to taste
  • 1 pound baby potatoes
  • 2 large onions, roughly chopped
  • 8 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 turkey thighs
  • 1 medium lemon, zested and juiced
Instructions
1
Firstly, preheat the oven to its highest temperature setting of 425 degrees Fahrenheit.
2
Next, combine butter, thyme, rosemary, parsley, garlic powder, cayenne pepper, salt, and black pepper in a small bowl. Set the herb mixture aside temporarily.
3
Subsequently, arrange potatoes, onions, and garlic on a baking sheet. Drizzle the vegetables with olive oil; sprinkle salt and pepper over them.
4
After that, gently pat dry turkey thighs with a paper towel to remove excess moisture; season with salt and pepper accordingly. Place the seasoned turkey thighs over the vegetables on the baking sheet.
5
Now, rub a generous amount of the herb mixture under the turkey skin and over the meat. Top with lemon zest and juice for added flavor.
6
Finally, bake the dish in the preheated oven for 30 minutes. Baste the turkey with the sheet juices periodically and continue baking, basting every 15 minutes, until the thighs are no longer pink in the centers, approximately 30 minutes more. Use an instant-read thermometer to check if the internal temperature has reached at least 165 degrees Fahrenheit.
