  • 3 eggs
  • 2 small lemons, juiced
  • salt and ground black pepper to taste

Boil vegetable broth in a 2-quart saucepan to an intense rolling motion. Lower heat to a gentle simmer and merge the rice into the broth mixture. Cover the saucepan and let it cook until the rice is soft and tender, approximately 20 minutes.

Combine eggs and lemon juice in a small bowl to create a harmonious blend. Gradually pour 1 ladle of hot broth into the egg mixture, stirring continuously to avoid any lumps. Continue adding small portions of hot broth until the egg mixture reaches the same temperature as the soup, if necessary.

Introduce the egg mixture into the broth and rice. Lower heat to a minimal simmer and cook until the soup is warm, around 5 minutes. Season with salt and pepper to enhance the flavors.
