- 1/4 cup poppy seeds
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 cup lemon flavored yogurt
- 1/4 cup vegetable oil
- 1 tablespoon grated lemon zest
- 1/3 cup lemon juice
- 3 tablespoons white sugar

Heat your oven to a high temperature of 400 degrees Fahrenheit or 205 degrees Celsius.

To avoid sticking, lightly spray a 12-cup muffin tin with cooking spray.

In a large mixing bowl, whisk together flour, 3/4 cup granulated sugar, poppy seeds, baking powder, baking soda, and salt until well combined.

In a separate mixing bowl, whisk eggs, yogurt, oil, and lemon zest until smooth. Gradually pour over flour mixture, then gently fold until just combined. Be careful not to overmix the batter.

Spoon an equal amount of batter into each prepared muffin cup. Place the muffin tin in a preheated oven at 400 degrees Fahrenheit for 20 minutes.

While the muffins are baking, mix lemon juice and 3 tablespoons granulated sugar together in a small bowl until the sugar has dissolved.

Remove the muffins from the oven and use a toothpick to create several small holes in the top of each muffin. Slowly pour about 1 tablespoon of the lemon juice mixture over the top of each muffin.
