Ingredients
- 1/4 cup olive oil
- 1/2 lemon, juiced
- 2 teaspoons dried oregano
- salt and pepper to taste
- 7 chicken thighs
Instructions
1
Preheat your oven to a high temperature of 450 degrees Fahrenheit, or 230 degrees Celsius.
2
Next, take some butter and rub it all over a 9x13-inch baking dish to prevent the chicken from sticking.
3
In a small bowl, combine some olive oil and freshly squeezed lemon juice, whisking them together until well incorporated.
4
Meanwhile, mix some dried oregano with salt and pepper to taste in a separate bowl.
5
Then, take the chicken pieces one by one and rub them thoroughly with the oregano-salt-pepper mixture, making sure to coat all surfaces evenly.
6
Place the chicken pieces into the prepared baking dish and pour half of the oil-lemon mixture over them.
7
After 15 minutes in the preheated oven, turn the chicken pieces over and pour the remaining oil-lemon mixture over them.
8
Continue baking in the preheated oven until the chicken is no longer pink at the bone and the juices run clear, taking an additional 15 to 20 minutes.
9
Finally, use a meat thermometer to check the internal temperature of the chicken near the bone; it should read at least 165 degrees Fahrenheit, or 74 degrees Celsius.
