Lemon Mushroom Chicken Tenders
Ingredients
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon paprika
  • salt and ground black pepper to taste
  • 1 pound chicken tenders
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 cup sliced mushrooms
  • 1/4 cup finely chopped onion
  • 1 1/2 teaspoons minced garlic
  • 2/3 cup fat free half-and-half
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons chopped fresh dill, divided
  • 1 tablespoon cornstarch
  • salt and ground black pepper to taste
  • 1 lemon, cut into wedges
Instructions
1
Combine the dried flavors of garlic powder, onion powder, paprika, salt, and pepper in a bowl.
2
Dust the seasoned mixture evenly onto both sides of chicken tenders.
3
Heat a generous amount of olive oil in a large skillet over medium heat.
4
Carefully place the chicken tenders into the hot skillet and sear until they develop a golden-brown color on both sides, taking approximately 3 minutes per side.
5
Transfer the cooked chicken tenders to a plate and loosely cover them with foil.
6
Gradually decrease the heat to medium and melt butter in the same skillet.
7
Add sliced mushrooms and onions to the skillet, allowing them to start browning, about 4 minutes.
8
Introduce minced garlic into the skillet and cook until it releases its fragrance, around 30 seconds.
9
In a separate bowl, whisk together half-and-half, chicken broth, lemon juice, 2 tablespoons of fresh dill, and cornstarch.
10
Slowly pour the mixture into the skillet, stirring constantly until the sauce thickens slightly, approximately 3 minutes.
11
Season the sauce with salt and pepper to taste.
12
Reduce the heat to low, adding cooked chicken back into the pan along with any accumulated juices.
13
Allow the chicken to simmer until it reaches an internal temperature of at least 165 degrees F (74 degrees C), indicated by the juices running clear.
14
Sprinkle a final tablespoon of fresh dill on top of the chicken before serving with lemon wedges.
