- 3 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 pound green lentils
- 1 bunch dinosaur kale, stems removed and leaves roughly chopped
- 1 lemon, zested and juiced

Preheat your cooking surface by heating the olive oil in a skillet over medium heat. Next, add the sliced onion and chopped carrot to the pan; continue stirring until they become tender and soft, approximately 4 minutes.
