Lemon Grilled Chicken Breasts
Ingredients
  • 4 skinless, boneless chicken breast halves
  • 1/2 cup lemon juice
  • ΒΌ cup olive oil
  • 2 teaspoons dried parsley
  • seasoning salt to taste
  • ground black pepper to taste
  • 1/2 teaspoon onion powder
Instructions
1
Acquire the necessary ingredients and prepare the grill.
2
First, preheat your outdoor grill to a medium-high heat level. Next, lightly brush the grill grate with oil to prevent sticking.
3
Now, work on one chicken breast at a time. Place the breast between two sheets of plastic wrap or parchment paper on a flat surface, such as a cutting board. Using a meat mallet or a rolling pin, gently flatten the breast to an even 1/2-inch thickness.
4
In a large zip-top bag, combine lemon juice, olive oil, dried oregano or parsley, seasoning salt, black pepper, and onion powder. Add the chicken to the bag and press out as much air as possible before sealing it tightly. Gently massage the chicken to ensure the marinade is evenly distributed. Refrigerate the marinated chicken for at least 30 minutes or up to 12 hours.
5
Next, preheat your grill to a medium-high heat level. Lightly brush the grill grate with oil again.
6
Place the chicken breasts, smooth-side down on the preheated grill; cook, covered, until no longer pink and juices run clear, about 5 minutes per side. To check for doneness, insert an instant-read thermometer into the center of the chicken and it should read at least 165 degrees F (74 degrees C).
7
Transfer the cooked chicken to a cutting board and cover it with aluminum foil. Let it rest for 5 minutes.
8
Finally, serve the chicken with lemon wedges on the side.
