Ingredients
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 2 cups sugar
- 1 cup butter
- 4 eggs
- 3 tablespoons grated lemon zest
- 2 tablespoons brandy-based orange liqueur (such as Grand MarnierĀ®)
- 1 1/4 cups buttermilk
- 1/2 cup fresh lemon juice
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.
2
Next, lightly coat the inside of two loaf pans with a thin layer of oil or cooking spray.
3
Sift together 2 cups of flour, 1 teaspoon baking powder, 1/4 teaspoon ground ginger, and a pinch of salt in a bowl. Set the mixture aside.
4
In a separate large bowl, use an electric mixer to cream together 2 cups of sugar and 1/2 cup of softened butter until light and fluffy.
5
Beat in 2 large eggs one at a time, allowing each egg to fully incorporate before adding the next.
6
Add 1 tablespoon of lemon zest and 2 tablespoons of orange liqueur to the bowl, stirring until well combined.
7
In a separate bowl, whisk together 1 cup of buttermilk and the flour mixture from earlier. Gently fold in the wet ingredients until just combined.
8
Pour the batter into the prepared loaf pans and smooth the tops.
9
Bake in the preheated oven for 50 minutes, or until a toothpick or small knife inserted into the centers of the loaves comes out clean.
10
Remove the loaves from the pans and transfer them to a wire rack to cool completely.
11
Meanwhile, whisk together 3/4 cup of granulated sugar and 2 tablespoons of freshly squeezed lemon juice in a small bowl until the sugar dissolves.
12
Drizzle the warm loaves with the sugar and lemon juice mixture, allowing it to set before serving.
13
Allow the loaves to cool completely before serving.
