Ingredients
- 12 medium sea scallops
- 1 teaspoon salt, or more to taste
- 5 tablespoons clarified butter (ghee), warm
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
Instructions
1
Prepare the scallops by placing them in a large container and sprinkling with salt. Cover the container and refrigerate for 30 minutes to allow the flavors to meld.
2
In a separate bowl, whisk together 5 tablespoons of warm butter, lemon juice, and minced garlic until well combined. Allow this mixture to sit at room temperature for 30 minutes, allowing the flavors to harmonize.
3
As the scallops begin to come to room temperature, remove them from the refrigerator and let them sit for 20-30 minutes. This gentle warming process will help to tenderize the scallops.
4
In a non-stick pan, melt the remaining 3 tablespoons of butter over medium-high heat. Ensure that the butter does not smoke, as this can lead to a burnt flavor. Using a pastry brush, coat the scallops with the garlic-butter mixture and add them to the hot butter in the pan. Cook for 2 minutes, or until the bottoms begin to sear and turn golden.
5
Flip the scallops over and brush them with the garlic-butter mixture once more. Continue to cook for an additional 2 minutes, or until they are cooked through.
6
Remove the scallops from the heat and allow them to continue cooking, albeit off the heat, for an additional 5 minutes. This final resting period will help to fully cook the scallops and infuse them with flavor.
7
Finally, plate the scallops and serve immediately
