  • 2 tablespoons hot pepper sauce
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 pounds large shrimp, peeled and deveined with tails attached
  • 6 skewers

Combine olive oil, chopped parsley, freshly squeezed lemon juice, spicy hot pepper sauce, minced garlic, rich tomato paste, dried oregano, salt, and black pepper in a large mixing bowl. Set aside a small portion for later use as a basting sauce; pour the remaining marinade into a large, resealable plastic container. Add the shrimp to the container, ensuring they are well-coated with the marinade; remove any excess air and seal the container tightly. Refrigerate for 2 hours to allow the flavors to meld.

Prepare a grill for medium-low heat. Thread the shrimp onto skewers, piercing them once near the tail and once near the head; discard any remaining marinade. Lightly brush the grill grate with oil to prevent sticking. Cook the shrimp until they are opaque and cooked through, flipping them frequently for about 5 minutes per side; baste the shrimp with the reserved marinade during cooking.
