Ingredients
- 4 tablespoons butter, divided
- 4 cloves garlic
- 2 tablespoons lemon juice
- 1/4 teaspoon onion powder
- 4 (8 ounce) skin-on, bone-in chicken thighs
- salt and ground black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
1
First, preheat your oven to the ideal temperature for cooking, which is 375 degrees Fahrenheit or 190 degrees Celsius.
2
Next, melt a generous amount of butter in a microwave-safe container using your oven's microwave function. This should take around 1 to 2 minutes, depending on the strength of your microwave.
3
Then, use a chef's knife to crush garlic cloves and add them to the warm butter. Mix in some freshly squeezed lemon juice and a pinch of onion powder, setting the mixture aside for now.
4
After that, season both sides of your chicken thighs with a pinch of salt and pepper. In a separate pan, melt the remaining tablespoon of butter over medium-high heat in your oven-safe skillet. Sear the chicken, skin-side down, for 3 to 4 minutes.
5
Flip the chicken over and brush its skin with the warm lemon-butter mixture. Pour any remaining butter mixture into the skillet, then remove it from heat.
6
Now, place your chicken in a preheated oven and let it cook until the juices run clear and the meat is no longer pink at the bone, approximately 30 minutes. To check for doneness, insert an instant-read thermometer into the chicken near the bone and verify that it reaches 165 degrees Fahrenheit or 74 degrees Celsius.
7
Every 10 minutes, brush the chicken's skin with the pan juices that have accumulated in the skillet. This will help keep it moist and flavorful.
8
Once your chicken is cooked, remove it from the oven and transfer it to a serving platter. Drizzle any remaining pan juices over the top of your chicken and garnish with some fresh parsley.
