Melt butter and sugar together in a heat-proof bowl set over a pot of simmering water, using very low heat; gradually add beaten eggs to the mixture and stir in the freshly squeezed lemon juice. Combine the grated lemon zest into the butter mixture; continue stirring constantly until the entire mixture has thickened to your desired consistency.
