Lemon Chicken Scallopini
Ingredients
  • 1/2 cup all-purpose flour
  • 1/4 cup butter, softened
  • 1 clove garlic, pressed
  • 2 skinless, boneless chicken breast halves
  • salt and ground black pepper to taste
  • 4 ounces sliced mushrooms
  • 1/4 cup white wine
  • 2 tablespoons chicken-flavored demi-glace, or to taste
  • 2 tablespoons lemon juice
  • 20 capers, or to taste
  • 1 teaspoon chopped fresh parsley, or to taste
  • 2 lemon slices
Instructions
1
Begin by placing the flour in a shallow dish for easy access. Next, combine butter and garlic in a small bowl to create a smooth mixture.
2
Carefully slice each chicken breast horizontally, cutting about halfway through the thicker portion to create a uniform thickness. Be cautious not to cut all the way through, as this can make the breast fall apart.
3
Place each chicken breast flat on a work surface and gently pound it to achieve an even thickness. After that, coat both sides of the breast with a generous amount of flour.
4
In a large skillet, melt the garlic butter over medium heat until it ceases to bubble and foam.
5
Add the chicken breasts to the skillet, cooking them for 6-8 minutes per side until they turn a golden brown.
6
Remove the chicken to a serving platter and cover it with a lid to keep it warm.
7
In the same skillet, cook the mushrooms in the remaining butter until they start to develop a brown color around the edges.
8
Add wine, demi-glace, lemon juice, and capers to the skillet and stir until well combined.
9
Reduce the heat to a low simmer, season with salt and pepper, and stir in some chopped parsley.
10
Transfer the chicken breasts to individual plates and spoon the savory sauce over the top.
