  • 3 cups baby spinach
  • 1/2 cup shredded fontina cheese
  • 1/4 cup freshly grated Parmesan cheese, plus more for garnish.
  • 2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon table salt

Decrease the heat to a lower temperature; simmer, stirring constantly, until the orzo becomes tender and the mixture thickens, approximately 8 to 10 minutes.
