- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup raisins
- 3 tablespoons white sugar, or to taste
- 2 egg yolks
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1 tablespoon butter, or as needed

Combine the dry ingredients - flour - with eggs and salt in a bowl until you achieve a uniform consistency.

Spray a small skillet lightly with cooking spray. Pour 2 to 3 tablespoons of the mixture into the skillet and gently rotate it until everything is evenly distributed. Place the skillet over medium heat and cook for approximately 2 minutes, or until the edges start to curl away. Flip the mixture over and cook for an additional minute on the other side, or until it's lightly browned. Transfer the cooked blintzes to a plate.

In another bowl, blend cream cheese with raisins, sugar, egg yolks, lemon peel, vanilla extract, and cinnamon to create a smooth filling. Spoon 2 to 3 teaspoons of the filling onto each blintze and roll them up tightly, similar to a small package.

Heat 1 tablespoon of butter in a skillet over medium heat. Carefully place the filled blintzes into the skillet and cook for about 30 seconds on each side, or until they're lightly browned.
