Lemon Blueberry Cheesecake Squares
Ingredients
  • 1/2 (14.4 ounce) package graham crackers, coarsely broken
  • 3 tablespoons white sugar
  • 3/4 teaspoon ground cinnamon
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, at room temperature
  • 3/4 cup white sugar
  • 3 medium lemons, zested and juiced
  • 3 large eggs
  • 2 1/2 cups fresh blueberries
Instructions
1
First, preheat your oven to the desired temperature of 325 degrees F (165 degrees C).
2
Next, take a moment to prepare your baking pan by greasing the bottom and covering it with parchment paper. Press the paper down at the corners to create a slight overhang, ensuring it stays in place during baking.
3
Now, combine graham crackers, sugar, and cinnamon in a food processor bowl. Process until the mixture is well combined and resembles bread crumbs. Gradually add in melted butter, pulsing a couple of times to fully incorporate the ingredients.
4
Press the mixture firmly into the prepared baking pan, making sure it adheres evenly to the surface.
5
Then, bake the crust in a preheated oven until it's set and has reached the desired consistency. This should take around 12 minutes.
6
In a separate bowl, combine cream cheese, sugar, lemon zest, and lemon juice in the food processor. Pulse until well combined, then add eggs one at a time, blending to combine after each addition.
7
Process the mixture until it's smooth and creamy.
8
Once the crust is removed from the oven, pour the filling over it and sprinkle evenly with blueberries. The berries will sink slightly into the filling, which is perfectly normal.
9
Bake the dessert until the filling is mostly set and only slightly jiggly in the center. This should take around 45 minutes.
10
Remove the dessert from the oven and let it cool completely, which should take about 30 minutes. Refrigerate until set, allowing it to chill for at least 3 hours.
11
Finally, remove the dessert from the pan using the parchment lining and slice it into 12 bars.
