  • 1 (14.5 ounce) can chicken broth, divided
  • 1/2 cup chopped onion
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour

  • 1 pinch ground black pepper
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 teaspoon fresh lemon juice

Combine asparagus, 1/2 cup chicken broth, and onion in a large saucepan; cover and heat intensely over high heat until boiling point is reached. Gradually decrease the heat to a low simmer and cook, uncovered, until the asparagus is tender and easily pierced with a fork, approximately 12 minutes. Transfer the mixture to a blender; blend until the desired consistency is achieved and set aside.

In the same saucepan, melt butter over a low heat setting; stir in flour, salt, and pepper to create a smooth paste. Cook the mixture, stirring constantly, for 2 minutes to allow it to thicken.

Increase the heat to a moderate level; add the remaining chicken broth, stirring continuously, until the mixture reaches its boiling point. Stir in the pureed asparagus and milk to create a smooth texture.

Place sour cream in a small bowl; stir in a ladleful of hot soup until well combined, then pour the mixture into the soup and stir in lemon juice. Warm the soup to a comfortable serving temperature, without allowing it to boil vigorously. Serve immediately.
