Leftover Turkey Soup

  • 1 picked over turkey carcass
  • 1 1/2 cups leftover stuffing
  • 1 onion, peeled and diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 tablespoon poultry seasoning
  • 1 teaspoon ground sage
  • 2 bay leaves
  • 2 1/2 quarts chicken broth
  • 1 cup water, or as needed
  • 1/2 teaspoon garlic salt, or to taste
  • ground black pepper, to taste
  • 2 cups (uncooked) regular long-grain white rice
  • 1 (16 ounce) package frozen green peas

Place the turkey carcass in a large, deep pot. Add the prepared stuffing, sliced onion, chopped carrots, and diced celery to the pot. Sprinkle in some poultry seasoning, dried sage, and bay leaves as well.

Next, pour in the chicken broth. If necessary, add a bit more water to ensure everything is fully submerged.

Bring the mixture to a rolling boil over medium-high heat, then gradually decrease the heat to a more moderate level and let it simmer for approximately 1 hour. During this time, you may need to remove any foam that forms on the surface of the liquid.

Remove the turkey carcass and all the bones from the pot. Carefully pick out any remaining meat that was attached to the carcass and bones, setting it aside for later use.

Return the extracted meat back into the pot, discarding any bones and skin in the process.

Add a pinch of garlic salt and some pepper to taste, stirring well to combine. Then, add the cooked rice back into the pot and bring everything to a boil once more over medium-high heat.

Gradually reduce the heat to a more moderate level and let it simmer for about 15 minutes, allowing the flavors to meld together.

Stir in some frozen peas and continue to let it simmer until the rice is tender, which should take around 10 minutes more.

Finally, adjust the seasonings to your liking before serving the soup hot and enjoying it!
