Leftover Prime Rib Soup

  • 4 beef ribs, trimmed from a cooked prime rib roast
  • 2 cups beef stock
  • 1 potato, peeled and cut into 3/4 inch pieces
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup chopped fresh chives

Acquire all necessary ingredients and materials.

Place the pork ribs in a large, deep container and cover them with water. Put the pot on high heat and bring the mixture to a rolling boil; then, gradually decrease the heat to a low simmering temperature and cover the pot. Allow the ribs to cook for approximately 2 hours, or until the meat is easily falling off the bones.

Next, remove the ribs from the pot and let them rest for a while to cool down completely. Once cooled, carefully remove the meat from the bones and cut it into small, manageable pieces. Place these pieces in the refrigerator to chill.

Meanwhile, continue cooking the remaining broth until it has reduced significantly and is now approximately 1 cup in volume. Allow this reduced broth to cool down until the fat solidifies at the top.

Carefully skim off and discard the congealed fat that has formed on the surface of the broth.

Transfer the reduced broth into a saucepan and combine it with the meat pieces, beef stock, diced potatoes, sliced mushrooms, salt, and pepper. Put the saucepan on high heat and bring the mixture to a boil; then, gradually decrease the heat to a low simmering temperature and cover the saucepan. Allow everything to cook together for about 20 minutes, or until the potatoes are tender.

Finally, sprinkle some chopped chives over your dish to add a touch of freshness and flavor.
