Ingredients
- 6 cups chicken stock
- 1 pound red lentils
- 3 tablespoons olive oil
- 1 large onion, chopped
- 1 tablespoon minced garlic
- 1 tablespoon ground cumin
- 1/2 teaspoon cayenne pepper
- 3/4 cup fresh lemon juice
- 1/2 cup chopped cilantro

Begin by heating the chicken stock and lentils in a large saucepan over high heat, causing them to reach a rolling boil. Then decrease the heat to medium-low and cover the saucepan, allowing it to simmer gently for 20 minutes.

In a separate skillet, warm olive oil over medium heat. Add the onion and garlic to the skillet and cook until the onion has become soft and translucent, taking approximately 3 minutes.

Add the cooked onion mixture to the lentils and season with cumin and a touch of heat from the cayenne. Continue to cook the lentil mixture until it is tender and easily breakable, taking around 10 minutes.

Finally, blend the lentil mixture in a standing blender or with an immersion blender until it reaches a smooth consistency. Stir in some freshly squeezed lemon juice and sprinkle chopped cilantro on top
