Ingredients
- 2/3 cup medium coarse bulgur
- 1 cup fresh mint leaves
- 1 large onion, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground allspice
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 1/2 pounds lean ground lamb
- 3 tablespoons olive oil

Start by placing the bulgur in a microwave-safe container and covering it with water, making sure the water level is just above the bulgur. Then, cook it in the microwave on high for 1 to 2 minutes, or until the bulgur is puffed up and the water has been fully absorbed. After that, take a moment to gently stir the bulgur and let it sit for a while until it cools down.

Next, take the mint leaves and transfer them to the bowl of a food processor. Process the mint until it's finely chopped, then gradually add the onion through the feed tube to achieve a uniform consistency. Combine the mint-onion mixture with the bulgur, cumin, allspice, salt, and pepper in a bowl. Mix everything together thoroughly.

Now, take the ground lamb and mix it with the bulgur mixture until well combined. Using your hands, shape the lamb mixture into small patties that are roughly palm-sized.

Heat some olive oil in a skillet over medium heat, then add the kibbeh patties and cook until they're golden brown on both sides and cooked through, flipping them once during the process. This should take around 6 minutes on each side.
