- 1 green chile pepper, seeded and diced
- 2 cloves garlic, chopped
- 1 pound chopped fresh mustard greens
- 1 pound chopped fresh spinach
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt

Heat a large skillet or wok over the medium-high heat, allowing the butter to melt.

Combine turmeric, cumin seeds, chile pepper, and garlic in the skillet; cook and stir constantly until these ingredients are well combined and fragrant, approximately 2 minutes.

Gradually add the chopped mustard greens and spinach to the skillet, stirring occasionally as you introduce each portion. Begin with the tougher stems and thicker leaves before proceeding to the softer, more delicate parts of the greens.

Continue cooking and stirring until all of the greens are completely wilted, at which point you can proceed with adding ground cumin, coriander, and salt to the mixture.

Cover the skillet, lower the heat, and let the greens simmer for about 10 minutes, or until they are tender. If necessary, add water to the skillet in order to maintain a moist consistency among the greens throughout the cooking process.
