- 2/3 cup chopped fresh parsley, divided

- 3 (6 ounce) cans tomato paste
- 2 cups water
- 1 (15 ounce) can tomato sauce
- 1 1/2 teaspoons Italian seasoning
- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons dried basil leaves
- 1 pound part-skim ricotta cheese
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1/2 cup grated Parmesan cheese
- 3 large eggs
- 2 teaspoons garlic salt
- 1/4 teaspoon ground black pepper
- 3 cups shredded mozzarella cheese

Preheat your oven to a high temperature of 350 degrees F (175 degrees C).

Next, lightly coat the interior of a deep 9x13-inch baking dish with a thin layer of oil or cooking spray.

To begin preparing the lasagna, fill a large container with salted water and bring it to a rolling boil.

Cook the lasagna noodles in the boiling water, stirring occasionally, until they have reached a tender yet still slightly firm texture - about 8 minutes.

Drain the noodles and set them aside.

In a large skillet, heat some oil over medium heat.

Cook the sausage, onions, 1/3 cup of chopped parsley, and garlic until the sausage is nicely browned and crumbly - about 5 to 7 minutes.

Drain the excess fat from the skillet and then stir in a paste made from tomato paste, water, tomato sauce, Italian seasoning, oregano, and basil until well combined.

Layer the lasagna with four noodles, 1/2 of the ricotta mixture, 1/3 of the remaining sauce, and 1 cup of shredded mozzarella.
