Ingredients
- 2 cups white flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups buttermilk
- 3 eggs, separated

Combine the dry ingredients - flour, salt, and baking soda - in a bowl. Mix them well until they are evenly blended.

Next, add the buttermilk and egg yolks to the bowl and stir until you have a smooth, consistent batter.

In another large container, use an electric mixer to beat the egg whites until they become light and fluffy. Stop the mixer occasionally to lift it straight up, as this will help create soft peaks in the egg whites. Instead of forming sharp peaks, aim for soft mounds.

Gently fold the egg whites into the prepared batter using a gentle, sweeping motion. Be careful not to overmix.

Heat a large aebleskiver pan over medium heat on your stovetop.

Before cooking, spray each cup with a non-stick cooking spray to prevent the batter from sticking.

Pour the batter into each cup, filling them about 2/3 full.
