Latin-Style Red Beans
Ingredients
  • 1 small onion, chopped
  • 1 small green bell pepper, chopped
  • 2 cloves garlic, chopped
  • 1 tablespoon fresh cilantro leaves
  • 1 teaspoon annatto or achiote powder
  • 1 tablespoon olive oil
  • 1/2 cup diced ham
  • 1 (16.5 ounce) can red beans, drained
  • 1 cup peeled and diced potatoes
  • 1/2 cup peeled and diced pumpkin
  • 1 cup water
  • 1 teaspoon salt
Instructions
1
Combine the onion, bell pepper, garlic, cilantro, and annatto powder in a blender or food processor. Set the resulting mixture aside for later use.
2
Heat a substantial saucepan over medium heat, ensuring it reaches the desired temperature. Pour in olive oil and cook diced ham with the previously prepared mixture for 10 minutes, until it reaches a golden brown color. Introduce the beans, potatoes, pumpkin, water, and salt into the saucepan. Gradually reduce the heat to a low setting and simmer, stirring occasionally, for approximately 25 minutes, until the mixture thickens and the potatoes and pumpkin become tender.
