  • 1/2 bunch cilantro

Remove any surplus fat from the pot, then add chopped onion and minced garlic; cook for 2 minutes before adding diced red pepper, green pepper, dried fruit, pitted olives, concentrated tomato paste, water, and chopped fresh herbs. Bring the mixture to a gentle boil, then lower the heat to a low temperature, cover it with a lid, and let it cook slowly for 10 minutes, or until the vegetables have reached your desired level of tenderness.
