- 1 gallon lard for frying (manteca)
- 5 pounds boneless pork shoulder, cut into 1 1/2-inch cubes
- 6 bay leaves
- 2 tablespoons kosher salt
- 1 1/2 teaspoons coarse ground black pepper
- 2 large onions, quartered
- 3 whole garlic cloves
- 1 large orange, halved

Melt the lard in a large, deep roasting pan over medium heat. Combine the pork, bay leaves, salt, pepper, onions, and garlic in a single mixture. Squeeze the juice of the orange into this blend, then add the orange halves to it. If necessary, add more lard to ensure all ingredients are covered.

Simmer the mixture for approximately 45 minutes to an hour, or until the pork becomes tender enough to be easily pulled apart with a fork. Remove the orange, onion, and garlic from the pan, then carefully lift the pork cubes out of the lard using a slotted spoon.
